Frosted Fudge Brownies


Last week, I had to bake for my uncle's reunion, and his request was brownie ^^.




I was happy that it was a huge success, but the point was I gave all my brownie that I baked to my uncle and no one in my family had a chance to eat it. The next day, my brother said to me that he wanted to eat the brownie too.
Well, it's not a hard thing to bake a pan of brownie, anyway I didn't want to bake the same recipe again. But how can you make brownie, esp. fudge brownie different when all the ingredient of every recipes are almost the same. So rather than adding or removing ingredients I just topping it with the frosting, haha. Simple cocoa frosting, that made by beating butter, icing sugar and cocoa powder together, easy and delicious. I use Frangelico (hazelnut liqueur) to add delicious nutty fragrance to my frosting, but I know that some people don't have (or don't want to use) it, in that case you can use vanilla extract too.
If you want to cut it neatly, chill the brownie after frosting to set it before cutting into pieces.

Frosted Fudge Brownies
Make 18 x 18 cm



Fudge brownie batter
80 g .............................. Unsalted butter
130g ............................. Dark chocolate (I use 66% Dark chocolate)
160 g............................. Granulated sugar
1/8 tsp .......................... Salt
1/2 tsp ........................ Vanilla extract
2 ................................... Eggs
50 g ............................... All purpose flour
17 g ............................... Cocoa powder
60 g .............................. Walnuts

Frosting
125 g ............................ Unsalted butter
1/8 tsp .......................... Salt
90 g .............................. Icing sugar
1 1/2 tsp ........................ Cocoa powder
1 tbsp ............................ Frangelico (or 1/2 tsp vanilla extract)





Line 18 x 18 cm cake pan with baking paper.
Preheat an oven to 180℃ .



Bake in walnuts in the oven for 5-7 minutes.
Remove from the oven and chop.
Let it cool completely before using.



Put butter and chocolate into a microwavable bowl.
Heat in a microwave  (600W) for 1.30-2 minutes.
 Remove from the microwave, and stir until melt.



Put the sugar, salt and vanilla into the bowl.
Stir to combine, let it cool for 5 minutes.



 Add eggs and stir to combine.



Sift flour and cocoa powder into the bowl, pour in the walnut.



Stir to combine.



Pour into the prepared pan.



Bake in preheated oven for 20-25 minutes.
Let it cool completely.



Beat the butter with salt until smooth, pour the icing sugar gradually, and beat until combine.



Add the cocoa powder and Frangelico.


 Beat until smooth.



Spread the frosting over the brownie before serving.
