Apple upside down cake

Apple is one of my favourite fruit ^^, eating fresh, or using it in cooking or baking, there are so many ways to enjoy it.


Plus it becomes soft after cooking, the texture of the food that I LOVE! This time I use in for making delicious Apple upside down cake, but this one is dairy free version. As always I use Rice bran oil shortening and Rice bran oil for the fat part in this cake (you can use other kinds of oil and shortening too). Because shortening is 100% fat, when the butter is only 80% fat, you can't substitute the butter with the shortening or vice versa in some recipe and get the same result. And this recipe is the example, if you want to use butter, you will need 140-150 g of it not 130g or the cake will be drier. 
To get the base of the cake level, you have to turn the cake upside down before letting the cake cool, with this method the cake will be more beautiful.

Apple upside down cake (Dairy free version)
 15 cm cake pan


Saute apple
1 tbsp ................... Rice bran oil
260-300 g ............. Sliced apple (about 2 medium)
25-30 g .................. Granulated sugar
25 g ........................ Raisins

Cake

130 g....................... Rice bran oil shortening
1/4 tsp .................... Salt
1/2tsp ...................... Vanilla extract
85 g ......................... Granulated sugar
2 .............................. Eggs
140 g ....................... Cake flour
1 tsp ........................ Baking powder







Preheat an oven to 180℃
Line 18 cm round cake pan with baking paper.


 Place frying pan over medium heat, pour oil into the pan.
Put apple slices, sugar and raisins into the pan.


 Cook until soften.


 Line the saute apple in prepared pan.
Let it cool completely before using.


 I use Rice bran oil shortening.


 Put Rice bran oil shortening into a bowl with salt and vanilla, beat until soften.


 Add the sugar and beat until fluffy.


 Put the eggs into the bowl, and beat until combine.


 Sift cake flour and baking powder into the bowl.


 Fold to combine.


 Put the batter into the prepared pan, smooth the top.
Bake for 48-53 minutes, or until a toothpick insert into a center come out with a few crumbs.


 Remove from the oven, place new piece of baking on top.


 Turn the cake upside down.


Remove the pan and baking paper, let it cool before cut into piece.
