Strawberry Yogurt Rare Cheesecake

 My mom and I love to go to supermarket, haha, it's more fun for us to shop for food than anything else.




And it always give me the inspiration, how can you stay still when you see delicious ingredient in front of you. Last week, I got beautiful (and very sweet) strawberry when I went to the supermarket, and I think about making something yummy!
Well, one of my favourite cake is cheesecake, so I think it will be great to put my strawberry into it. But as I didn't want to turn on my oven so rare cheesecake was the best choice ^^.
I used about 250g of the strawberry in my cake, you can use more or less of it. 
The weather is very gloomy lately, lot of rain and no sunshine, and because of it I couldn't shoot the video as much as I want -*-. I decided to buy LED light for video shooting, hope it will solve my lighting problem. I really love taking photo and shooting video, and I will be very happy if something that I love can make you happy too.

Strawberry Yogurt Rare Cheesecake
Make 18 cm cake 



Base
130 g ....................... Oreo cookies
40 g ......................... Melted unsalted butter

Cheesecake
45 ml ....................... Water
8 g ........................... Gelatin powder
200 g ....................... Cream cheese (Room temperature)
................................. Pinch of Salt
1/2 tsp ..................... Vanilla bean paste (or vanilla extract)
80 g ......................... Granulated sugar
2 tbsp ...................... Lemon juice
150 g ....................... Plain yogurt
100 g ....................... Whipping cream
250g ........................ Strawberry

Cream chantilly
150 g ........................ Whipping cream
15 g .......................... Icing sugar



 Remove the filling from the Oreo cookies.


 Crush the cookies with a rolling pin.


 Mix with melted unsalted butter.


 Pour into 18 cm round cake pan (with removable base).
Press to smooth the top.

 Refrigerate until ready to use.


 Make the cheesecake.
Put the gelatin powder into the water.
Let it bloom for at least 5 minutes before using.


 Beat the cream cheese with salt and vanilla until smooth, add the sugar and beat until combine.
 Heat the gelatin mixture in a microwave  (600W) for 20 seconds, stir to melt the gelatin.
Pour into the bowl. Beat to combine.


  Pour the yogurt and lemon juice into the bowl. Beat to combine.


 Whip the whipping cream until ribbon stage.


 Mix 1/3 of the whipped cream into the bowl.


 Fold the rest of the whipped cream.


 Until fully combine.


 Place strawberry into the prepared pan (I use about 2/3 of the strawberry).
Pour cheesecake batter into the pan.


 Refrigerate for 1 hour.


 Whip the whipping cream with icing sugar to make Cream chantilly.


 Spread Cream chantilly over the cheesecake.


  Refrigerate for 1 hour.


 Warm the side of the pan, and remove the cake from the pan.




Decorate with the rest of the strawberry, and enjoy!
